The Laboratory Pasteurization Count (LPC)
- LPC is an estimate of the number of bacteria that can survive laboratory pasteurization at 62.8oC (143oF) for 30 minutes
- The process destroys most of the mastitis pathogens, selecting for those bacteria that can survive pasteurization temperatures
-
- Not a regulatory test. Many progressive milk plants perform this test to ensure quality of the final product
-
- Bacteria that are not killed by pasteurization are enumerated using the SPC technique
